Poda means roasted or cooked by fire. Inspired by Odisha’s wood-fired kitchens, these dishes celebrate charcoal, embers, smoke and mustard oil. Chakata — a rustic Odia preparation of cooked or fire-roasted ingredients, hand-crushed and seasoned with mustard oil, chilli and aromatics.
